Namanya langsung tidak mempunyai ciri-ciri komersial, apatah lagi apabila melihat pada rupa dan warnanya yang hitam.

Bagaimanapun, sinonim dengan frasa hitam itu menawan, sambal hitam belimbing buluh (sambal hitam) tetap mendapat tempat di hati penggemar hidangan pembuka selera yang terkenal di Pahang barat itu.

Tanpa sebarang aroma yang boleh membangkitkan selera, hidangan tradisional berasaskan belimbing buluh, lada atau cili api dan ikan bilis yang dipelopori penduduk Lipis, Raub dan Jerantut mula mengalami transformasi dalam memenuhi selera dan cita rasa masyarakat moden hari ini.

Lebih menarik, penjenamaan semula nama sambal hitam kepada sambal Pahang oleh Tengku Puan Pahang, Tengku Azizah Aminah Maimunah Iskandariah, baru-baru ini bakal mempopularkan lagi produk tradisional orang kampung yang sudah dinikmati sejak puluhan tahun lamanya itu.

Penukaran nama kepada sambal Pahang itu secara tidak langsung memberi nilai tambah kepada produk makanan tradisional sedia ada, sekali gus memberi kelebihan kepada industri pelancongan Pahang dalam memasyarakatkan hidangan rakyat kepada pelancong tempatan dan luar negara.


Beberapa pengusaha yang ditemui sempena Hari Penternak, Peladang dan Nelayan Kebangsaan (HPPNK) di Kuantan, Pahang, baru-baru ini mengakui permintaan terhadap sajian pembuka selera itu semakin meningkat, malah ada kalangan mereka diminta menyiapkan tempahan sehingga 10 kilogram.

Seorang pengusaha, Maznah Abdul Rahim, 54, berkata, penyediaan sambal Pahang tidak rumit kecuali ketika memasak belimbing buluh yang memakan masa berjam-jam lamanya sehing�ga bertukar warna kepada coklat tua atau hitam.

Secara asas, katanya, proses menghasilkan belimbing hitam itu mudah walaupun mengambil berjam-jam untuk mengeringkannya.

Tampuk pada belimbing dibuang terlebih dulu dan dibasuh untuk membuang kotoran yang melekat jika ada.

"Masukkan belimbing buluh ke dalam tin sehingga penuh bersama garam kasar dan masak dengan api sederhana sehingga belimbing menjadi kecut dan bertukar menjadi coklat kehitam-hitaman (anggaran satu tin biskut 800 gram, satu peket kecil garam kasar).

"Tidak perlu menggunakan air semasa merebus kerana belimbing mengeluarkan airnya sendiri," katanya yang mewarisi resipi sambal hitam diperturunkan nenek moyangnya.

Dia berkata, belimbing buluh itu dimasak menggunakan dapur kayu atau arang. Proses merebus belimbing mengambil masa antara tiga hingga enam jam bergantung kepada jumlah belimbing yang digunakan.

"Dari segi kualiti belimbing, semakin lama direbus semakin lama ia boleh disimpan sehingga bertahun-tahun lamanya dan selamat dimakan kerana tiada bahan pengawet.

"Ada juga remaja yang gemar melakukan aktiviti lasak menempahnya untuk dibawa sebagai bekalan makanan dan pembuka selera ketika melakukan aktiviti perkhemahan di pusat rekreasi di kampung ini," katanya.

Bagi Wan Juhaida Wan Hassan, 33, pengusaha sambal Pahang kini boleh menjana pendapatan lebih tinggi berdasarkan permintaan yang semakin meningkat.

Sejak mengusahakan produk tradisional itu beberapa bulan lalu, permintaan untuk sambal hitam sentiasa meningkat terutama dalam kalangan mereka yang hendak mengadakan majlis perkahwinan atau jamuan makan.

"Saya tidak menang ta�ngan menghasilkan sambal ini, malah terpaksa menolak permintaan kerana bimbang tidak dapat menyiapkannya mengikut waktu dijanjikan.

"Saya memperoleh resipi ini daripada nenek yang diperturunkan kepada ibu (Masti Mohd Dawi, 62) dan menjadi sebahagian daripada punca pendapatan kami sekeluarga," katanya yang turut menghasilkan pelbagai masakan tradisional di kampungnya, Kampung Kuala Atok, Raub.

Wan Juhaida berkata, sejarah sambal Pahang di Raub bermula di Mukim Sega dibawa penduduk Lipis yang berhijrah ke daerah itu.

"Menurut ibu, sambal ini asalnya hanya menggunakan belimbing, cili api dan ikan bilis saja tetapi dipelbagaikan dari semasa ke semasa, malah ada yang mencampurkan bawang merah, bawang putih dan ikan rebus.

Dalam pada itu, Wan Juhaida berkata, tidak ramai yang mengetahui air rebusan belimbing enak dicicah dengan ikan bakar terutama ikan air tawar.

"Tidak perlu bahan tambahan lain, cuma patahkan lada. Ia amat menyelerakan. Air rebusan belimbing juga boleh digunakan untuk membersihkan ikan air tawar bagi menghilangkan bau hanyir," katanya.

Ramai generasi muda tidak mengetahui cara pe�nyediaan sambal hitam mungkin disebabkan kurang pendedahan terhadap masakan tradisi itu.

"Malah ada yang tidak menyedari kewujudan sambal ini kecuali mereka yang menghadiri majlis kenduri-kendara, doa selamat dan hari raya kerana ia hidangan wajib di kebanyakan majlis berkenaan di kawasan Pahang barat," katanya.

Wan Juhaida berkata, tidak perlu mencari resipi untuk mendapatkan sukatan bahan kerana ia mengikut kreativiti masing-masing dalam menghasilkan sambal mengikut selera sendiri.

Norhaida Md Kamarudin, 41, pula mempelajari masakan tradisi itu daripada orang lama sewaktu membantu kerja memasak di majlis kenduri.

"Kami selalu bergotong-royong membuat sambal Pahang apabila ada majlis keramaian di kampung ini. Di situlah saya belajar cara memasaknya.

"Rasa sambal hitam belimbing buluh ini memang terbaik kerana membuka selera dengan rasanya yang pedas dan masam, malah ia boleh dimakan begitu saja bersama nasi panas," �kata�nya yang menetap di Kampung Melayu Cheroh, Raub.

Katanya, harga belimbing hitam yang siap direbus kini mencecah RM40 sekilogram dan sambal hitam siap berharga antara RM80 hingga RM100 sekilogram.

"Ramai kenalan dan ahli keluarga yang menetap di luar Raub kerap meminta kami menyediakan sambal hitam dalam kuantiti yang besar untuk dibawa pulang ke negeri masing-masing kerana ada permintaan daripada mereka yang sudah menikmati keenakan sambal Pahang ini," katanya.
